One More…Freezer Meal Idea!

As January comes to a close, I’ve got one last freezer meal idea for you. Chili! It cooks up quickly if you buy the packet with the seasonings all included and can easily be doubled and then frozen. I’ve done it.

Here’s what you’ll need:

1-2 lb of ground hamburger meat (depending on how much you’re making)
1-2 packets of seasoning mix
1-2 cans of diced tomatoes (usually calls for this on the packet, just check it)
1-2 cans of kidney beans, undrained

What you’ll do:

If you’re making double, simply follow the directions but add twice as much as it calls for. It still comes out the same and cooks for the same length of time.

My seasoning packet usually says to brown the ground beef first and drain it, then add the other ingredients and mix. Bring it to a boil and simmer 10 minutes. Then you’re done.

This would also work well with ground tofu if you’d rather go that way. You can get other beans as well for a different flavor.

Chili is a great idea. You can put it into several serving size containers, and then just dump it into a small pot on the stove once it thaws a little bit, and it will warm through enough to eat.

I cook and freeze chili all the time, it's my absolute favorite freezer meal. Thanks for the reminder to make some more!
