Sweet Potato Balls

I think Thanksgiving might be my favorite holiday.  My childhood memories are filled with a full house of relatives, lots of good food, a burning fire, and falling asleep watching football.  Having sons, I can only hope that they will always want to come home to celebrate this holiday with their dear old mom and dad.  Here is the recipe for one of my favorite dishes for Thanksgiving meal...sweet potato balls.


1 can sweet potatoes (heat to warm)
1/2 stick butter
1/4 cup brown sugar
pinch of cinnamon
(Mash and mix all of the above together)
1 bag large marshmellows
Cornflakes cereal
Divide and wrap mixture around 1 marshmellow at a time forming into balls until mixture is gone
Roll balls in crushed cornflakes until coated
Grease baking pan and bake at 325 degrees until hot/melted
Top with butter


I never said it was healthy....but it is good!

YUM!!!!! I bet I could get the hubby to eat sweet potatoes this way...haha...
